New Recipe: Nut Butter Nice-Cream

The seasons are changing and although it’s still up and down here in Victoria, we just had to share this divine Nut Butter Nice-Cream from Melrose Health with you. You’ll never know it’s completely free from gluten, dairy and refined sugar. You’re welcome. 


  • 2 large frozen bananas
  • 4 tablespoons Melrose Macadamia Spread
  • ½ cup coconut milk
  • ¾ cup ice
  • 2 teaspoons cinnamon
  • To serve: shredded coconut, cacao nibs or sliced almonds (optional)


  1. Place banana, macadamia spread, coconut milk, ice and cinnamon into to your blender and blend until smooth, scraping down sides as needed.
  2. Scoop nice-cream out of blender and place in serving dish, top with things like shaved coconut, cacao nibs or sliced almonds. Serve immediately.

    I am in South Africa, so also going into summer and looking for summer food … This is so yummy. I have made variations of it and all of them are delicious and satisfying. Add a couple of table spoons of raw cacao for a bit of a choccie hit. Have also made it with soaked (activated) raw cashews when I didn’t have nut butters left. Almond and vanilla is another nice combination.
