Raw Cashew and Avo Zuchetti

This recipe is inspired by the wonderful Lee from Supercharged Food. Read my review here. It’s just perfect for when you just want a light refreshing meal ready in minutes. If you’re cooking for one, this keeps in the fridge but is best eaten the next day. Gluten free, nutrient dense and delicious.

Ingredients (Serves 2)


  • ½ cup cashews
  • ½ avocado
  • 2 tablespoons coconut oil
  • 2 tablespoons water
  • The juice of 1 lemon
  • 1 handful fresh basil
  • 1 tablespoon fresh chilli, finely chopped
  • 2 tablespoons nutritional yeast*
  • Sea salt, to taste
  • Black pepper, to taste


  • 1 large zucchini, spiralized
  • 2 stalks celery, diced
  • Sea salt, to taste
  • The juice of ½ a lemon


  1. Blend all sauce ingredients in a blender until smooth.
  2. Top spiralized zucchini and celery with sauce. Sprinkle sea salt on top and serve with lemon. Enjoy.
