Super Easy Pumpkin Soup

Those of us in Australia are facing the harsh reality of the last few days of warmer weather. Winter will be here before we know it. Personally I enjoy the change in seasons, and love swapping smoothies and salads for soup and crockpot dishes. Join me? This simple and nourishing pumpkin soup is a great way to top up your immune system and stay warm as the weather starts to cool. Enjoy.

  • 1 can organic coconut cream

  1. Heat oil in a large pan over a medium heat.

  3. Add water, pumpkin, herbs and spices. Simmer, covered, for 20-30 minutes or until pumpkin is soft.
  4. Remove from heat and set aside to cool slightly.
  5. Blend until smooth and return to pan, add coconut cream and heat slowly until hot. Taste test and feel free to add more spice if desired.
