Feel free to use just one fruit listed below and half the creamy coconut gummy mix to simplify this recipe or change it up with your fruit of choice.

Method

  1. To make the strawberry gummy mix, place all ingredients apart from the gelatin into a small saucepan over medium heat. Cook for 3-4 minutes or until it starts to bubble, stir to combine. Set aside to cool before blending in a food processor. Place mixture into a bowl and stir through gelatin powder.
  2. To make the orange gummy mix, place all ingredients apart from the gelatin into a small saucepan over medium heat for 3-4 minutes or until it starts to bubble, stir to combine. Place mixture into a bowl and set aside to cool before stirring through gelatin powder.
  3. To make the mango gummy mix, place all ingredients apart from the gelatin into a small saucepan over medium heat for 3-4 minutes or until it starts to bubble, stir to combine. Set aside to cool before blending in a food processor. Place mixture into a bowl and stir through gelatin powder.
  4. You are now ready to place the fruit mixtures into separate moulds and fill to about three-quarters of the way (to allow space for your cream layer).  Place in fridge to set at least one hour.

  6. Add cream layer on-top of the fruity gummies and put back into the fridge to set.
  7. Gently remove the gummies from the moulds when ready to eat and enjoy!
  8. Store in the refrigerator in a sealed container for up to 5 days.

Hi Catherine, we used silicone chocolate moulds from House but you can experiment with shapes and sizes! You can even use a deep baking tray with baking paper, pour in the fruit layer, let it set, pour over the cream layer, let it set and cut them into squares.
    I hope that helps 🙂
