New Recipe: Red Lentil Dahl

Ensuring your iron levels are optimal is essential for the transport of oxygen to all parts of the body and cellular energy production. In simple terms, adequate iron intake leads to higher energy levels and I think we can all appreciate the importance of feeling great!

Lentils are a fantastic source of iron, protein and fibre and our Red Lentil Dahl is the perfect winter warmer.

Ingredients (Serves 4)

  • 1 tablespoon cold-pressed extra virgin coconut oil
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 1 tablespoon ginger, grated
  • 1 red fresh chilli, deseeded, finely chopped
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 2 tomatoes, diced
  • 1 cup dried red lentils, rinsed
  • 1 can coconut milk
  • 2 cups vegetables broth
  • 1 lemon, juiced
  • 200g fresh spinach leaves
  • Salt & pepper to taste

To serve:

  • 1 head broccoli, floretted

Method

  1. Heat oil in a non-stick saucepan over medium-high heat. Add onion, garlic and ginger, stirring for 2-3 minutes or until fragrant.

  2. Add chilli, spices and tomatoes and stir for a further 2-3 minutes.

  3. Add lentils, coconut milk and broth, season well and simmer for 30 minutes.

  4. Whilst Dahl is cooking, steam broccoli to your liking.

  5. Just before serving, stir through lemon juice and spinach.

  6. Serve with broccoli and enjoy!
