These Cinnamon Roasted Sweet Potato Chips are a fantastic side dish with your choice of protein and greens. Serve with my Sugar Free Tomato Sauce and you’ll never need deep fried chips again. Enjoy.
- 1 medium sweet potato
- 2 tablespoons cold pressed extra virgin coconut oil, melted
- 1-2 teaspoons cinnamon
- Sea salt, to taste
- Fresh rosemary, to taste
- Preheat oven to 180°C.
- Slice sweet potato into thin chip-like pieces.
- Sprinkle with oil, cinnamon, salt and rosemary and bake for 20 minutes.
- For extra crunch, finish off under the grill until crispy.
