Today, the lovely Kirsty from Kultured Wellness has provided us with this gorgeous Fermented Chia Pudding to try.

Fermented Chia Pudding

Ingredients (Serves 1)

Pudding:

  • 2 tablespoons chia seeds
  • ½ cup Kultured Wellness Coconut Kefir
  • 1 teaspoon cinnamon
  • ½ teaspoon maca powder
  • ¼ apple, grated

To serve:

  • ¼ cup blueberries
  • 1 small handful of fresh mint, finely diced

Method

  1. Combine all ingredients in a jar and seal tightly.
  2. Leave overnight (8-12 hours) on the bench top to ferment.
  3. Top with blueberries and mint to serve.

Benefits:

Excess estrogen upsets the balance of bacteroides bacteria in your gut, which are associated with being able to maintain a healthy weight. Chia seeds are full of fibre, which is essential for carrying estrogen out of the body.  They are also full of vitamins and minerals including calcium, manganese, magnesium, phosphorous, zinc, B Vitamins, potassium, anti-oxidants and Omega 3s, and help feed the friendly bacteria in your gut.

The coconut water kefir contains Lauric and Caprylic acid which have anti-bacterial and anti-fungal properties. It is full of key electrolytes including potassium, sodium chloride and magnesium which help to cleanse and tone the liver.
