New Recipe: School Friendly Trail Mix

With the return of school lunchboxes we’ve used Tigernuts to create a nut-free, school friendly trail mix, a perfect snack to optimise energy and minimise blood sugar crashes. Tigernuts are a gluten, dairy and nut free product high in resistant starch and good fats. You can read our review here

Ingredients (Serves 8)

  • 1/2 cup Tigernuts
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 45g cacao nibs (or your favourite dark chocolate, roughly chopped)
  • 30g shredded coconut
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt

Method

  1. Combine all ingredients into a large bowl, stir to mix thoroughly and enjoy.
