With the return of school lunchboxes we’ve used Tigernuts to create a nut-free, school friendly trail mix, a perfect snack to optimise energy and minimise blood sugar crashes. Tigernuts are a gluten, dairy and nut free product high in resistant starch and good fats. You can read our review here.
Ingredients (Serves 8)
- 1/2 cup Tigernuts
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 45g cacao nibs (or your favourite dark chocolate, roughly chopped)
- 30g shredded coconut
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
- Combine all ingredients into a large bowl, stir to mix thoroughly and enjoy.
